  3. I’ve got a delicious recipe but don’t want to post the whole thing here…
    Ah well, here it is anyway 🙂

    100g butter
    3/4 cup sugar
    2 eggs
    1 ¼ cups flour
    1/2 teas salt
    1 ½ teas baking powder
    ½ cup milk
    1 ½ teas vanilla
    (I like to add sultanas too)

    Cream butter and sugar, add eggs and beat again. Stir in dry ingredients alternately with milk. Put into paper cases 180 degrees – sultanas can be added here. Icing optional.

  6. Red Velvet Cupcakes:
    I really want red velvet cake for my wedding cake, and these are a perfect way to try out the recipe, especially with cream cheese icing 😀

    I also use the large wacky chocolate cake recipe:
    as they are dairy free 😀 which are great for my boys to eat 🙂

    Basic Chocolate Cup Cake Recipe
    150g Butter – softened
    150g castor sugar
    175g self-raising flour
    3 eggs
    2 tbls cocoa powder
    1 tsp vanilla extract
    1. Pre-heat the oven to 350oF (180oC).
    2. Line a 12 cup cake pan, with cup cake papers.
    3. Crack the eggs into a cup and beat lightly with a fork.
    4. Place all the ingredients in a large bowl.
    5. Beat with an electric mixer for 2 minutes, until light and creamy.
    6. Divide the mixture evenly between the cake cases.
    7. Bake for 18-20 minutes until risen and firm to touch.
    8. Allow to cool for a few minutes and then transfer to a wire rack.
    9. Allow to cool fully before icing.

  10. I couldnt find the exact recipe online but in my edmonds for kids book i love the custard powder recipe 🙂 a bit like this

    Sophie loves making cupcakes, these work well

    Chocolate cupcakes

    100grms soft butter
    1 cup less 2 Tbsp caster sugar
    2 eggs at room temperature
    1 cup less 1 Tbs flour
    1/4 cup cocoa
    2 tsp baking powder
    105 mls warm milk

    heat oven 160

    Cream butter and sugar until light & fluffy add eggs 1 at a time.

    Sift dry ingredients and stir with warm milk alternately into creamed mixture until a smooth batter is achieved. Don’t over mix.

    Cook for 20 minutes cool and ice as desired.

    Butterfly cakes are also fun to make.
